Ingredients:

- 400g sliced chicken breast

- 175g basmati rice (uncooked weight)

- 1 broccoli (or other vegetable of choice)

- 60ml chicken broth

- 50ml low-sodium soy sauce

- 1 handful of cashews (about 30g)

- 1 onion

- 1.5 tablespoons cornstarch

- 10g peanut butter

- 10ml sesame oil

- 1 teaspoon rice vinegar

- 1 teaspoon brown sugar

- 1 garlic clove

- 1/3 teaspoon Chinese five-spice blend


Instructions:

1. Mix the sliced chicken with a tablespoon of cornstarch. Set aside.

2. Slice the onion and garlic. Sauté them in sesame oil in a wok for 3-5 minutes.

3. Add the sliced chicken to the wok.

4. While the chicken is cooking, separately cook the broccoli and basmati rice. No need to salt the rice.

5. In a glass, mix the chicken broth, low-sodium soy sauce, 1/2 tablespoon of cornstarch, peanut butter, sesame oil, rice vinegar, brown sugar, and Chinese five-spice blend.

6. When the chicken is golden brown, add the cashews and stir.

7. Pour in the sauce and stir constantly until it thickens.

8. Serve the Cashew Chicken with cooked broccoli and basmati rice.
